  • The climatic conditions and geographic location of San Luis Rio Colorado Sonora, gives this region a high potential for growing mezquite and thereby also has a high generation of fruit (péchita), which currently is not used as food for humans, due to ignorance of its nutritional content, so that large quantities produced, become only waste. So the purpose of this research is the creation of a pilot production plant of flour of the fruit of mesquite in the facilities of the Universidad Tecnológica de San Luis Rio Colorado (UTSLRC) to give people a food product with added value through its production and marketing. This proposes a potential alternative use for the fruit through the development of a value-added product such as the edible flour, as this is one of the main foods of Mexican families, on the other hand, now day many communities face problems to become self-sustaining in the production of food with high nutritional value.
