Aiming to a preliminary study in this work the results of bovine milk quality in the Mixteca Poblana region are presented. 29 milk samples from small stakeholders of 4 municipalities (Izúcar de Matamoros, Tepeojuma, Chietla and Chiautla de Tapia) were analyzed for acidity, pH, density, fat, non-fat solids and total solids. Samples were grouped by geographical similarities. An analysis of variance with location as predictor (non-parametric Kruskal Wallis for fat, a non-normal variable), showed significant differences for pH, acidity, density and total solids (p<0.05). The acidity, density and total solids are positively and significantly correlated (p<0.05). A comparison with Mexican standards showed that the milk of Chiautla de Tapia better meets specifications (pH � 6.66, acidity � 1.86 g/L, density 1.031 g/mL, fat � 38.1 g/L, non-fat solids � 94.6 g/L y total solids � 13.27%) and the lower quality was presented by the samples belonging to Izúcar de Matamoros and Tepeojuma. A factor analysis groups the results according to the geographical region which indicates the effect of environmental conditions in the quality of the milk produced.
