Resumen de Evaluación y propuesta de innovación del proceso de elaboración de piloncillo en la región Huatusco-Fortín, Veracruz

  • The aim of this work was to define an innovation plan for the sugar cane agroindustry, particulary those namely "trapiches" which are involve in the production of "panela or piloncillo" within Huatusco-Fortin area, into Veracruz state, evaluating different aspects of their production. For this purpose we applied a census into all piloncillo industries registered within the study area and then we formulate a development plan with specific objectives which must be perform into each piloncillo production unit to achieve, in first instance, a good quality of product, and then create improvements into the productive process, and finally, to modernize the equipment and machinery.

    This innovation plan will give a competitive advantage to piloncillo agroindustry.
