  • The aim of this work was to develop a typology of the sugar cane agroindustry, particulary those namely "trapiches" which are involve in the production of "panela or piloncillo" within Huatusco- Fortin area, into Veracruz state, evaluating different aspects of their production. For this purpose we applied a census into all piloncillo industries registered within the study area. The results were systematizing and analyzing to obtain a typology of trapiches which were clustered in four groups namely as: a) cluster I "small"; b) cluster II "medium"; c) cluster III "large"; and d) cluster IV "very large". All of these clusters are constituted by many piloncillo producers and everyone with different capacities, productive potential and socioeconomic level.
