The most popular form of dietary intervention in exer- cise performance studies is that of carbohydrate (CHO) ingestion, both before (DeMarco et al., 1999) and during exercise (Arkinstall et al., 2001), with the rationale based on the classic studies of the 1960s. The effect of pro- longed exercise on substrate availability and utilization, has received much attention in the literature, particularly in studies which have focused on cycling (Jeukendrup et al., 1997).
