    • In this article I examine the use of borrowing in a Basque manuscript from the Bibliothèque Nationale in Paris. The manuscript is a cooking book, and it contains 28 recipees. We do not know who the author is, nor the year in which it was written (see the introductory section). Dialectwise, the text should be ascribed to the oriental dialects (Souletin in particular), and both the expressions and the naturalness of the turns of phrase employed by the author that Basque was his or her mother language. At the same time, the big number of French borrowed expressions in the text shows that the author was not afraid of making extensive use of foreign terms. Sometimes, those borrowings do not seem to obey the phonological and morphological rules of the Basque language. This feature of the text follows probably from the technical status of the material, and the fact that the text is a translation. In this paper, I present the list of borrowings employed by the author, and point out the extens to which those borrowings have undergone phonological and morphological accomodation to Basque.
