    Durante el siglo XIX, como continuación de la trata de esclavos, cientos de miles de culíes chinos llegaron a Perú, donde se instalaron en las haciendas y poco a poco fueron desplegando sus costumbres, aromas y sabores. Uno de los ejemplos más notables de este despliegue es la proliferación de «chifas», populares restaurantes de comida oriental que se multiplican por las calles de Lima y otras ciudades del país. Allí se sirve el «chaufa», el clásico arroz frito, que se consume en su versión clásica o «peruanizada», con carne de res, mariscos y hasta ají. El éxito de la comida chino-peruana es un ejemplo de transculturación que revela los antiguos lazos entre ambos países.

    During the 19th century, as a continuation of the slave trade, hundreds of thousands of Chinese coolies were brought to Peru, where they were occupied in the haciendas and little by little spread their customs, their scents and their tastes. One of the most notable examples is the proliferation of «chifas», popular Chinese restaurants which were increasingly in evidence on the streets of Lima and other cities. In these restaurants, they serve «chaufa», the classical fried rice, in its original form or in a Peruvian version, with beef, shellfish and even hot pepper. The success of the Chinese-Peruvian food is an example of transculturation which reveals the long-standing links between the two countries.
