    El pulque, una bebida de significativo valor cultural en el Valle de Apan, ha experimentado un declive tanto en su relevancia social como económica, atribuido a una serie de factores que van desde la introducción de sustitutos hasta cambios culturales. Actualmente, su industria no ha desaparecido por completo, pero expandir la infraestructura para su producción industrializada sería arriesgado, dada la improbable cobertura de costos por la demanda. Esta investigación tiene como objetivo analizar las posibilidades a corto plazo de la producción de maguey pulquero y la oferta de pulque en el Valle de Apan. Se espera proporcionar un marco que facilite la toma de decisiones más informadas para cubrir las necesidades futuras de esta bebida a través del análisis de datos históricos y tendencias de demanda recientes.

    The pulque, a drink with significative cultural value in the Apan’s Valley, has experimented a decline in both social and economic relevance, attributed to a series of factors that go from the introduction of substitutes to cultural changes. Currently, its industry hasn’t disappeared completely, but expanding infrastructure for its industrialized production would be risky, given the improbable cost coverage for the demand. This investigation has the objective of analysing the short-term possibilities of the production of maguey pulquero and the pulque’s supply in the Apan’s Valley. Is also expected to provide a framework that eases the informed decision making in order to cover the future needs of this drink through the analysis of historical data and recent demand trends.
