Dulces Matemáticas, más allá de las “aplicaciones” de las fracciones

    El objetivo de la investigación consistió en analizar y comprender los conocimientos y procesos matemáticos que implementan los reposteros en la elaboración de pudines artesanales de frutas y su potencial aporte a la educación matemática. La metodología empleada fue de tipo cualitativa, de enfoque etnográfico, con método de recolección de información por medio de entrevistas semiestructuradas, observación participante y registro audiovisual. Para esta investigación se seleccionó una muestra de dos participantes, habitantes del barrio Carmen y el barrio la Playa. Se acordó un encuentro en su lugar de trabajo, en donde establecieron fecha y hora para realizar las entrevistas a dichos reposteros; quienes tienen una edad de 35 y 22 años respectivamente. Los resultados destacados se refieren a las fases de preparación de la masa, preparación del relleno y decoración del pudín. En estas fases, se evidencian diversos procesos matemáticos, incluyendo el uso de sistemas de medidas y escalas de temperaturas.

    The objective of the research was to analyze and understand the mathematical knowledge and processes implemented by pastry chefs in the production of artisanal fruit puddings and their potential contribution to mathematics education. The methodology used was qualitative, with an ethnographic approach, with a method of collecting information through semi-structured interviews, participant observation and audiovisual recording. For this research, a sample of two participants was selected, inhabitants of the Carmen neighborhood and the La Playa neighborhood. A meeting was arranged at their workplace, where they set a date and time for the interviews with the bakers; who are 35 and 22 years old respectively. The outstanding results refer to the phases of preparation of the dough, preparation of the filling and decoration of the pudding. In these phases, various mathematical processes are evidenced, including the use of measurement systems and temperature scales.
