Desde finales del siglo XX una nueva forma de relacionarnos con los alimentos genera un nuevo medio construido culturalmente, con consecuencias directas sobre el medio. En este nuevo contexto se prima el modo de producir, elaborar y manipular los alimentos que consume la población, para respetar y cuidar el medio ambiente y la salud de los consumidores. Aparecen nuevos alimentos en las sociedades europeas de la mano de la globalización: los insectos. Ante el panorama de destrucción de la naturaleza, y pretendiendo paliar los daños hechos al medio en el que vivimos, se intentan recuperar ambientes y ámbitos que conforman un modo de vida que fue desdeñada y ahora se considera ecológica, sostenible y respetuosa con el medio ambiente. Tal vez en este intento de recuperación tienen cabida los insectos como linkers entre el pasado y el futuro.

Since the ending of the 20th century, a new way to connect to food has generated a new culturally constructed environment, with direct consequences on the environment. In this new context, the way of producing, preparing and handling the food consumed by the population prevails, in order to respect and care for the environment and the health of consumers. New foods appear in European societies thanks to globalization: insects. Faced with the panorama of Nature destruction, and trying to mitigate the damage that has been done to the environment in which we live, nowadays we are trying to recover environments and areas that make up a way of life that was neglected and, at the present time, it is considered ecological, sustainable and respectful with the environment. Perhaps in this recovery attempt, insects have a place as linkers between the past and the future.
