En este texto presentamos los resultados de una investigación multinivel-multimétodo, que hemos llevado a cabo para averiguar qué imagen tiene la comida italiana entre los jóvenes universitarios madrileños. 471 jóvenes estudiantes de distintas universidades públicas madrileñas han contestado a nuestros cuestionarios. En un segundo momento hemos realizado 38 entrevistas cualitativas semiestructuradas con una submuestra de los mismos. Los resultados demuestran que, aunque se siga asociando Italia a pasta y pizza, la gran mayoría de los jóvenes universitarios madrileños es consciente de que la cocina italiana es mucho más variada de lo que habitualmente se cree en España y que se necesitaría un mayor conocimiento de los platos regionales y de los productos típicos italianos.

In this text, we present the results of an investigation multilevel-multi-method, that we have carried out to verify what image has the Italian food between the university young students of Madrid. 471 young students of different public universities of Madrid have answered to our questionnaires. In the second step, we have carried out 38 qualitative, semi-structured interviews with a subsample of the same ones. The results show that, though Italy continues being associated with pasta and pizza, the great majority of the university young students of Madrid realize that the Italian kitchen is much more varied of what ordinary people believe in Spain and that it would be very helpful a better knowledge of the regional Italian dishes and of its typical products.
