La presente investigación pretende definir los conceptos generales que permitan introducir al lector al maravilloso mundo del caramelo, iniciando por la indagación de sus orígenes y la evolución a través de la historia, determinar las características de cada uno de sus componentes o ingredientes, e identificar los usos adecuados de cada producto y de las técnicas correctas para obtener la textura adecuada para su utilización, así como los factores que afectan a su composición y resultado final.

The present investigation, pretends to define the general concepts that permits the reader to be introduced in the marvelous world of caramel, beginning with a search of its origin and evolution through history, determining the characteristics of each one of its ingredients and identify the useful uses of each product and the correct techniques to obtain the correct technique, the same as the factors that affect its composition and final result.
