This paper presents the results of an analysis of basic viticultural variables in Trentino (north‐east Italy). By focusing in detail on every production component, the aim is to improve steadily the quality of local wines, so that they can meet the changing requirements of the market. The approach adopted is based on the development of an understanding of the interaction between the methods of plant growth and the environment and the ways in which this influences the individual qualities of Trentino wines. Detailed analysis is carried out in order to identify the optimum conditions required to produce quality grapes and wine through an examination of environmental components (soil, site and microclimate), vineyard management (irrigation, fertilisation and canopy) and vegetation (clone and species).
