La diversidad culinaria no solo viene determinada por el contexto ambiental y por la disponibilidad económica. La diferencia radical entre unos sistemas culinarios y otros está determinada por la cultura. En este artículo analizo cómo las comidas de grupos sociales diferentes están condicionadas por los valores y deseos de esos grupos e igualmente se aborda la manera diferencial que tiene la cultura de crear diversos sistemas culinarios en función de las orientaciones particulares de carácter estético o moral.

Culinary diversity is not only determined by the environmental context and the economic availability. The radical difference between culinary systems and others is determined by culture.
In this article I analyze how the meals of the different social groups are conditioned by the values and desires of these groups and also by the different way that the culture has to create different culinary systems according to the orientations of aesthetic or moral character.
