El presente trabajo describe el uso del amaranto blanco (Amaranthus caudatus) en la producción de cerveza como fuente amilolítica complementaria a las materias primas principales y las flores de amaranto rojo (Amaranthus quitensis) como colorante. Se escriben ambos productos para comprender sus características físico-químicas y el posible impacto en el proceso de elaboración. Los resultados obtenidos en la elaboración de la cerveza muestran que es factible el uso de las semillas de amaranto blanco al 30% como adjunto sin el uso de enzimas exógenas, así como el de las flores de amaranto rojo como medio para aportar color de forma natural a ésta por su estabilidad a lo largo del proceso de elaboración.
This paper describes the use of white amaranthus (Amaranthus caudatus) in the beer production as an amylolytic source, complementary to the main raw materials, and flowers of red amaranthus (Amaranthus quitensis) to provide color. Both products are described to understand their physical-chemical properties and the impact on the process. Then the conditions used in the process, brewhouse recipe and diagram maceration are shown in the present project. Finally are described the production steps and conditions used to obtain a beer with an alcohol content of 5% v/v. The results obtained show that there is feasible to use seeds of white amaranthus 30% as adjunct without the use of exogenous enzymes in the production of beer, as well as the use of the red amaranthus flowers as natural color contributor with great colloidal stability.
