Resumen de Estudio microbiológico sobre lechugas: Influencia del lavado en agua con o sin adición de hipoclorito sódico comercial

  • Due to the bioburden of these vegetables, the efficiency of two treatments (drink water wash and sodium hypoclorite dissolved in drink water wash) to reduce it, has been studied. Forty-one samples of lettuce have been taken from markets and studied with refference to Aerobic Bacteria, Enterobacteriaceae, and Coliformes (faecalis and total).

    The results showed that the efficiency of washes was higher when using chlorine compounds than using drink water.

    When washing with chlorine compounds, a better yield was observed when the initial bioburden is not high.
