Volatile compounds in hydrolyzed pineaple (Ananas comosus L. Merryl) perola variety and clarified pasteurized juices obtained by solid-phase microextraction

    • Volatile compounds of depectinized pineapple juice and permeates obtained by ultrafiltration (UF)process using a Plate and Frame System with 50 and 100kDa polysulfone membranes were, respectively identified by High Resolution Gas Chromatography (HRGC/MS). The SPME (solid-phase microextraction) technique was used with a 65um polidimethylsiloxane/polivinilbenzene microfiber. The results showed that thirty-seven volatile compounds could be identified in depectinized pineapple juice. Substantial losses, mainly of low molecular weight compounds, were observed after ultrafiltration. Fifteen and seven volatile compounds were identified in the permeates, when 50 kDa and the 100 kDa polysulfone membranes were used. The observed losses of volatile compounds could be due to polarization concentration on the membrane surface, which promoted low permeate flows, to their retention in the retentate juice and/or to the clarification process.
